Method
White Chocolate Mousse

Bloom gelatin
Sprinkle the gelatin powder over 30 ml cold water in a small bowl and let sit for 5–10 minutes until fully absorbed and set aside.

Warm milk and yolks
In a small saucepan, heat 120 ml whole milk just until it begins to steam (do not boil). In a separate heatproof bowl, whisk the 4 egg yolks with 40 g granulated sugar until slightly thickened and pale.

Temper yolks
Slowly drizzle about one-third of the hot milk into the yolk-sugar mixture while whisking constantly to temper. Return the tempered yolk mixture to the saucepan and cook over low heat, stirring constantly with a spatula, until the mixture thickens slightly and coats the back of the spatula (nappe), about 2–4 minutes. Do not boil. Remove from heat immediately.

Melt white chocolate
Place chopped white chocolate (300 g) in a heatproof bowl. Pour the hot yolk-milk mixture over the chocolate and let sit for 1 minute, then stir gently until smooth and fully combined.

Add gelatin & flavor
Microwave the bloomed gelatin briefly (5–8 seconds) or melt over a double boiler until liquefied. Stir the melted gelatin into the warm white chocolate mixture, then add 1 tsp vanilla extract and a pinch of fine salt. Mix thoroughly.

Whip cream
Whip 400 ml cold heavy cream to soft-medium peaks. You want the cream to hold some shape but remain foldable.

Fold mousse
Take about one-quarter of the whipped cream and whisk it into the warm white chocolate base to lighten it (makes it easier to incorporate). Gently fold in the remaining whipped cream in two additions, using a spatula and folding motion to keep as much air as possible. Taste and adjust salt if needed.

Chill
Portion the mousse into serving glasses or a piping bag. Refrigerate at least 2 hours (or up to overnight) to set firmly.
Espresso Ganache

Prepare chocolate
Place the finely chopped dark chocolate (200 g) in a medium heatproof bowl.

Heat cream & espresso
In a small saucepan, heat 120 ml heavy cream with 60 ml fresh hot espresso and 1 tsp instant espresso powder (if using) until it just begins to simmer. Remove from heat immediately.

Combine & emulsify
Pour the hot espresso-cream mixture over the chopped dark chocolate. Let sit undisturbed for 60 seconds to soften the chocolate, then stir gently from the center outward until smooth and glossy. Add 20 g cubed unsalted butter and 1 tbs corn syrup (if using) and stir until fully incorporated and glossy. If the ganache is too thick, warm very briefly over a double boiler and stir to reach a pourable consistency.

Cool to piping consistency
Let the ganache cool at room temperature until slightly thickened but still pourable/pipeable (about 20–30 minutes). If needed, cool in the fridge briefly, stirring every 5 minutes to monitor consistency.
Chocolate Pearls & Assembly

Prepare pearls (if making)
If using ready-made pearls, lightly dust with 1 tsp unsweetened cocoa powder to remove shine. If making pearls from tempered chocolate: pipe small dots onto a silicone mat, refrigerate until set, then tap off and store in a cool place.

Assemble desserts
Spoon or pipe a layer (about one-third) of white chocolate mousse into each serving glass or bowl. Add a thin spoonful (about 1 tbs) of cooled but still pourable espresso ganache on top of the mousse layer. Repeat with another thin mousse layer if using taller glasses, finishing with a final dollop or small pool of espresso ganache (roughly 1–2 tbs per serving).

Garnish
Place a small cluster (6–8 g) of chocolate pearls on top of the final ganache. Lightly dust the surface with a pinch of espresso powder for aroma. Add a micro basil or mint leaf to each serving for brightness and color. Serve each portion with a mini doughnut or slice of doughnut on the side (1 each per serving).

Serve
Serve chilled. For best texture, remove from fridge 5 minutes before serving so ganache softens slightly. Leftovers: cover and refrigerate up to 2 days.
