    Preheat and prepare

    Preheat oven to 425°F (220°C). Line two baking sheets with parchment paper or lightly grease them. Position oven racks to allow even air circulation.

    Peel (optional) and cut the sweet potatoes into 3/8–1/2-inch thick fries or sticks. Place cut fries in a large bowl of cold water and soak 20–30 minutes to remove excess starch. Drain and dry thoroughly using clean kitchen towels or paper towels — moisture will prevent crisping.

    Coat fries

    Return dried fries to a dry bowl. Toss with cornstarch until lightly and evenly coated. Add olive oil, kosher salt, black pepper, and smoked paprika; toss well to coat each fry.

    Arrange and bake

    Spread fries in a single layer across the prepared baking sheets, leaving space between pieces (use two sheets if needed). Bake on the middle rack at 425°F (220°C) for 20 minutes, then rotate sheets between racks and flip each fry. Continue baking another 12–18 minutes until edges are caramelized and fries are crisp. Watch carefully last 5 minutes to prevent burning.

    If you want extra crispness, broil on high for 1–2 minutes after baking—watch closely to avoid burning.

Hot Honey Sauce

    Combine and warm

    While fries bake, combine honey, apple cider vinegar, red pepper flakes, lemon juice, and salt in a small saucepan. Warm over low to medium-low heat, stirring, until mixture is just simmering and the red pepper flakes bloom (about 3–4 minutes). Do not boil vigorously — gentle simmer is enough to infuse the honey.

    Adjust heat

    Taste carefully (use a spoon cooled on the side) and adjust spice: add more red pepper flakes for heat or a splash more vinegar for brightness. Remove from heat and let cool slightly; sauce will thicken a bit as it cools.

Finish & Serve

    Place baked fries in a large bowl. Drizzle 2/3 of the hot honey over fries and toss gently to coat. Reserve remaining hot honey for serving so guests can add more to taste.
