Sumac-Sugar Rim
Prepare rim
In the small shallow plate combine the granulated sugar and ground sumac, stirring to distribute the sumac evenly. Rub the lemon wedge around the outside rim (or inner lip) of the chilled flute to lightly moisten it, then gently dip or roll the moistened rim into the sumac-sugar mixture until it is evenly coated. Set the glass aside.
Mixing the Spritz
Build cocktail
Measure and pour 1.5 oz elderflower liqueur into the prepared chilled flute.
Add sparkling wine
Slowly top with 3 oz chilled dry sparkling wine (tilt the glass slightly and pour gently) to preserve bubbles and prevent foaming. The elderflower and wine will gently mix without stirring.
Finish with soda
Add 0.5 oz club soda or sparkling water to lighten the spritz and add extra effervescence. Use a bar spoon to give a very gentle one-turn stir if needed — avoid vigorous stirring to keep bubbles.
