    Prepare protein

    Select one protein for the skewer: chicken, lamb, or bison. Trim excess fat and cut into uniform 1–1.5 inch (2.5–3.8 cm) pieces so they cook evenly. Aim for about 0.25 lb (115 g) of meat per skewer.

    Make marinade

    In a medium bowl combine 1 tablespoon olive oil, 1/2 teaspoon minced garlic, 1/2 teaspoon lemon juice, 1/4 teaspoon kosher salt, 1/8 teaspoon black pepper, 1/8 teaspoon ground cumin and 1/8 teaspoon smoked paprika. If marinating chicken for extra tenderness and flavor, whisk in 1 tablespoon plain yogurt. Mix until emulsified.

    Marinate

    Add the cut meat pieces to the marinade and toss to coat thoroughly. For chicken, marinate at least 30 minutes and up to 4 hours in the refrigerator. For lamb and bison, marinate 30 minutes to 2 hours. (If short on time, a 15–20 minute coating still improves flavor.)

    Thread skewers

    If using wooden skewers, soak them in water for 30 minutes before using to prevent burning. Thread the marinated meat onto the skewer, leaving a little space between pieces so heat circulates and they cook evenly. Leave about 1 inch of skewer at each end for handling.

    Cook - Grill or Broil

    Grill method: Preheat grill to medium-high (about 425–450°F / 220–230°C). Oil the grates. Place skewers on the grill and cook for 10–12 minutes total, turning every 2–3 minutes, until an instant-read thermometer inserted into the center reads: chicken 165°F (74°C); lamb 135–145°F (57–63°C) depending on desired doneness (135°F for medium-rare, 145°F for medium); bison 130–140°F (54–60°C) for medium rare to medium. Broil method: Preheat broiler on high with oven rack 6 inches from heat. Place skewers on a foil-lined baking sheet and broil 4–6 minutes per side, watching closely to avoid burning, until the same internal temps are reached.

    Rest and garnish

    Remove skewers from heat and let rest for 3–5 minutes to redistribute juices. Sprinkle chopped fresh parsley over the skewers before serving.

    Serving suggestion

    Serve each skewer with lemon wedges and optional sides such as rice, flatbread, grilled vegetables, or a yogurt-tahini sauce. One skewer is approximately one serving when ordered as an add-on.
