Preparation
Prepare the coffee
Brew the espresso or strong coffee and let it cool to room temperature. Add the dark rum or coffee liqueur to the coffee and stir to combine.
Make the mascarpone mixture
In a mixing bowl, separate the egg yolks from the whites. Whisk the egg yolks with the granulated sugar until pale and thick. Add the mascarpone cheese and vanilla extract, mixing until smooth.
Soak the ladyfingers
Dip each ladyfinger into the coffee mixture for about 1-2 seconds, ensuring they are soaked but not soggy.
Assemble the tiramisu
In a rectangular dish, layer half of the soaked ladyfingers at the bottom. Spread half of the mascarpone mixture over the ladyfingers. Repeat with another layer of soaked ladyfingers and the remaining mascarpone mixture.
Chill and serve
Cover the dish with plastic wrap and refrigerate for at least 4 hours or overnight. Before serving, dust the top with cocoa powder.
