In a small bowl, combine paprika, cayenne pepper, garlic powder, onion powder, salt, and black pepper. Mix well to create a seasoning blend.

Pat the strip steak dry with paper towels to remove excess moisture. This helps achieve a good sear.

Drizzle olive oil over the steak and rub it evenly on both sides.

Sprinkle the seasoning blend generously over both sides of the steak, pressing it into the meat to adhere.

Cooking on a Skillet

Heat a cast-iron skillet over high heat until it is smoking hot.

Carefully place the seasoned steak in the skillet. Cook for 4-5 minutes on one side until a nice crust forms.

Flip the steak and cook for an additional 4-5 minutes for medium-rare, or adjust the time based on your desired doneness.

Use a meat thermometer to check for doneness: 130°F for medium-rare, 140°F for medium.

Once cooked to your liking, remove the steak from the skillet and let it rest for 5-10 minutes before slicing.
