Prepare and season
Pat the turkey bacon slices dry with paper towels to remove excess moisture. On a plate or cutting board, arrange the slices in a single layer. Lightly brush both sides with the olive oil. Sprinkle black pepper, smoked paprika, and kosher salt evenly over both sides. If using maple syrup for a glazed finish, brush one side with half of the maple syrup now and reserve the rest for finishing.
Pan-fry method (recommended)
Place a large nonstick or stainless steel skillet over medium heat. Once warm (about 1–2 minutes), add the seasoned turkey bacon in a single layer without overlapping (work in batches if necessary). Cook for 3–4 minutes on the first side, pressing gently with a spatula to ensure even contact. Flip and cook for 2–3 minutes more, or until edges begin to crisp and slices reach an internal temperature of 165°F (74°C) if you check with a thermometer. In the last 30–45 seconds of cooking, brush the top side with the remaining maple syrup (if using) and allow it to caramelize lightly. Remove cooked slices to a paper-towel-lined plate to drain.
Oven-bake method (alternative, for larger quantities)
Preheat the oven to 400°F (200°C). Line a baking sheet with foil and place a wire rack on top. Arrange seasoned turkey bacon in a single layer on the rack. Bake for 10–14 minutes, flipping once halfway through, until edges are crisp and the bacon is cooked through. If using maple glaze, brush the bacon with the remaining maple syrup during the last 2 minutes of baking. Remove from oven and transfer to a plate lined with paper towels to drain any excess fat.
Finish and serve
If the skillet has browned bits, add 1 tablespoon water to the pan over medium heat and scrape the fond to create a quick pan jus; spoon a little over the bacon for added flavor. Let the bacon rest 1 minute. Serve hot as an a la carte side with breakfast plates, sandwiches, or salads. Leftover cooked turkey bacon can be refrigerated in an airtight container for up to 4 days or frozen for up to 1 month.
