Batter & Toast
Prepare custard
In a shallow wide bowl, whisk together 2 large eggs, 1 cup whole milk, 2 tbsp heavy cream, 1 tbsp granulated sugar, 1 tsp vanilla extract, 1 tsp ground cinnamon and a pinch of salt until fully combined and slightly frothy.
Soak bread (for French toast option)
If making French toast, lay 2 slices of thick brioche/challah in the custard and let sit 20–30 seconds per side, pressing gently so the bread absorbs the custard but does not fall apart. Drain briefly on a wire rack.
Cook
Heat a large nonstick skillet or griddle over medium heat and add 1 tbsp unsalted butter. When foaming subsides, add the custard-soaked bread (or if using mini waffles/pancakes, rewarm cooked waffles/pancakes on the griddle 1–2 minutes per side until warm and slightly crisp). Cook French toast 2–3 minutes per side, or until deep golden brown and cooked through. Transfer to a warm plate and keep warm while you prepare fruit.
Fruit Topping
Prepare fruit while French toast rests. Hull and slice 4 strawberries and place in a small bowl with 1 tsp granulated sugar and 1 tsp lemon juice, toss gently and let macerate 5–10 minutes to release juices. Slice 1 banana and measure 1/2 cup fresh blueberries.
Combine: After macerating, fold sliced banana and blueberries into the strawberries gently so the fruit is evenly coated with the strawberry juices.
Plating & Finishing
Assemble: Place the 2 pieces of French toast (or 2 mini waffles or 2 pancakes) on a serving plate. Spoon the macerated strawberry, banana, and blueberry mixture generously over the top so the fruit covers the toast evenly.
Dust & serve: Using a fine-mesh sieve, dust 1 tbsp powdered sugar lightly over the fruit and toast. Serve immediately with 1/4 cup maple syrup on the side or drizzled over the top.
