Sweeten and flavor yogurt

Spoon 1 cup of plain Greek yogurt into a medium bowl. Stir in 1 tablespoon of honey and 1 teaspoon vanilla extract (if using) until evenly combined and slightly sweetened; taste and adjust sweetness with up to 1 additional tablespoon of honey if desired.

Prepare strawberries

Rinse the strawberries under cold water, hull them (remove green tops), and quarter each berry. Place in a small bowl.

Prepare blueberries

Rinse the blueberries and drain them well. Pat gently with a paper towel if they are wet to avoid sogginess.

If using lemon zest, grate about 1/2 teaspoon of lemon zest over the strawberries and blueberries and gently toss to brighten the fruit flavors.

Assembly & Garnish

Layer the bowl

Spoon the sweetened Greek yogurt into a serving bowl or glass, smoothing the top with the back of the spoon.

Add fruit

Arrange the quartered strawberries and whole blueberries over the yogurt, either in a single layer or artfully in sections (strawberries on one side, blueberries on the other) for a sunrise look.

Add granola and nuts

Sprinkle 3/4 cup granola evenly over the fruit and yogurt, then scatter the 2 tablespoons chopped nuts on top for extra crunch.

Finish with honey and mint

Drizzle the remaining 1 teaspoon (or to taste) of honey over the granola and fruit. Garnish with 3–4 fresh mint leaves for aroma and color. Serve immediately so granola stays crisp.
