Prepare ingredients
Crack the eggs into a small bowl and lightly beat with a fork until yolks and whites are combined; season with a pinch (about 1/8 tsp) of salt and a small grind of black pepper. Dice the onion and tomato, crumble the feta if not pre-crumbled, mince the garlic, and chop spinach if using.
Heat pan and cook aromatics
Place a 10-inch nonstick or cast-iron skillet over medium heat. Add the olive oil and butter. When the butter has melted and begins to foam (about 30 seconds), add the diced onion and cook, stirring occasionally, until translucent, about 3–4 minutes. Add the minced garlic and cook for 30 seconds until fragrant.
Cook gyro meat
Raise heat to medium-high and add the gyro meat to the skillet. Break larger pieces into bite-sized pieces with a spatula if needed. Cook until browned and warmed through, about 2–3 minutes. Sprinkle the dried oregano, remaining salt (adjust to taste), black pepper, and red pepper flakes (if using) over the meat; stir to combine.
Cook the eggs
Reduce heat to medium-low. Pour the beaten eggs into the cleared side of the skillet. Allow eggs to set around the edges for about 10–15 seconds, then gently scramble with a spatula, folding them toward the center. Cook the eggs until mostly set but still slightly glossy (about 1–2 minutes); then fold them into the gyro, onions, and tomatoes so everything combines. Avoid overcooking — eggs will finish cooking from residual heat.
To serve (optional)
Transfer the Greek Skillet to plates or serve directly from the pan. Garnish with chopped fresh parsley and a lemon wedge to squeeze over the top for brightness. Serve with warm pita or toasted bread on the side.
