Taco Filling (Huevos Rancheros)

Method

Protein (if not pre-cooked)

If using raw chorizo or raw sausage: heat a skillet over medium heat, add 1 tsp oil if needed, crumble 4 oz into the pan and cook 6–8 minutes until browned and cooked through. Drain excess fat and keep warm. If using bacon: cook 3 slices until crisp (pan or oven), then crumble and keep warm. If protein already cooked, warm gently in a skillet over low heat.

Spicy Queso

Make queso

In a small saucepan over low heat combine 6 oz chopped or shredded white American cheese and 1/2 cup half-and-half. Stir constantly until cheese begins to melt and mixture is smooth (about 4–6 minutes). Reduce heat to very low and stir in 2 tbsp chopped pickled jalapeños (or fresh), 1 tbsp finely chopped onion, 1/4 tsp ground cumin, 1/4 tsp smoked paprika (optional) and 1/4 tsp salt. Taste and adjust seasoning. Keep warm on lowest heat or transfer to a small bowl and cover to retain heat.

Guacamole

Halve and pit the avocado; scoop flesh into a small bowl. Mash roughly with a fork leaving some chunks. Stir in 1 tbsp fresh lime juice, 1 tsp chopped cilantro, 1 tsp finely diced red onion, 1/4 tsp salt and 1/8 tsp black pepper. Taste and adjust lime and salt. Cover with plastic wrap pressed to the surface to prevent browning and set aside.

Mexican Hash Browns

Dry the thawed hash browns in a towel to remove excess moisture. Heat a large nonstick skillet over medium-high heat and add 2 tbsp oil. Once shimmering, add 1/4 cup finely diced onion and 1/4 cup diced red bell pepper; sauté 2–3 minutes until softened. Add 2 cups shredded hash browns, 2 tbsp drained diced green chiles, 1/2 tsp ground cumin, 1/2 tsp chili powder and 1/2 tsp salt. Press the mixture into an even layer and cook undisturbed 4–6 minutes until the bottom is golden and crisp. Flip in sections (or invert onto a plate and slide back) and cook another 3–5 minutes until crisp and cooked through. Adjust heat as needed to avoid burning. Keep warm, break into two portions to serve with tacos.

Huevos Rancheros (Scrambled Egg Filling)

In a bowl whisk 4 large eggs with 2 tbs milk, 1/2 tsp salt and 1/4 tsp black pepper until blended.

Heat a nonstick skillet over medium-low and add 1 tbsp butter. When butter is melted and foamy, pour in the beaten eggs. Let eggs sit for about 10–15 seconds, then gently stir with a spatula in slow folding motions to create soft curds. When eggs are about 75% set (still slightly wet), add 1/2 cup tomato salsa and 1/2 cup shredded cheddar/Monterey Jack. Fold gently until eggs finish cooking and cheese is melted, about 30–60 seconds. Remove from heat immediately to prevent overcooking.

Fold in the warmed chosen protein (about 3–4 oz total per two tacos) into the scrambled egg mixture, taste and adjust salt if needed. Keep warm.

Tortilla Prep & Assembly

Warm 2 tortillas by heating them in a dry skillet over medium for 20–30 seconds per side, or wrap in foil and warm in a 350°F (175°C) oven for 5–7 minutes, or microwave covered with a damp paper towel for 20–30 seconds.

Place warm tortillas on a plate. Divide the huevos rancheros egg-and-protein mixture between the two tortillas, spooning evenly (approximately half the filling per taco).

Spoon 2–3 tbsp spicy queso over each taco (more if desired). Add a generous spoonful (about 1–2 tbsp) of guacamole to each taco. Garnish with fresh cilantro leaves and a squeeze of lime wedge.

Serve tacos immediately with Mexican hash browns on the side.

Notes & Timing

Prep tip: cook the protein and make the queso while the hash browns cook to streamline timing. Total active cook time is about 25–30 minutes. Keep components warm in low oven (200°F / 95°C) if preparing ahead briefly.
