Oven method (crispy, even)
Preheat the oven to 400°F (205°C). Line a large rimmed baking sheet with foil and place a wire rack on top. Arrange bacon slices in a single layer on the rack without overlapping. Lightly sprinkle 1 tsp black pepper evenly over the slices. For glazed bacon, brush each slice with maple syrup during the last 5 minutes of cooking. Bake 15–20 minutes for medium crispness, or 20–25 minutes for extra crispy, rotating the pan once halfway through. Remove and transfer to paper towels to drain for 2 minutes before serving.
Stovetop method (faster, stovetop flavor)
Place a large cold skillet (cast-iron preferred) over medium heat. Lay bacon strips in a single layer, not overlapping. Cook 4–6 minutes per side, adjusting heat so fat renders without burning. If using maple syrup, brush on during the last 30–60 seconds and let caramelize. Transfer cooked bacon to paper towels to drain.
Breakfast Sausage Links
For pre-cooked or fully raw links: Heat a large skillet over medium heat and add 1 tsp vegetable oil. Add 12 sausage links in a single layer. Brown on all sides, turning frequently, about 8–10 minutes total. Lower heat and add 2 tbsp water, cover, and steam for 3–4 minutes to ensure they are cooked through (internal temp 160°F/71°C for pork). Remove lid and cook an additional 1–2 minutes to evaporate excess moisture and re-crisp the casing. Transfer to a plate and rest 2 minutes before serving.
Alternative: Bake links on a sheet pan at 375°F (190°C) for 18–22 minutes, turning once, until internal temp reaches 160°F (71°C).
Pork Breakfast Patties
Make the patty mix: In a bowl, combine 1 lb ground pork with 1 tsp kosher salt, 1 tsp black pepper, 1 tsp dried sage, 1 tsp onion powder, and 1 tsp brown sugar (if using). Mix gently until just combined; overworking will make the patties tough.
Form patties: Divide mixture into 8 equal portions (about 2 oz each) and gently shape into 3-inch wide, 1/2-inch thick discs. Press a slight dimple in the center of each patty with your thumb to prevent doming during cooking.
Cook patties: Heat a large skillet over medium-high heat and add 1 tsp neutral oil. When the oil is shimmering, add patties in a single layer without crowding (cook in batches if necessary). Cook 3–4 minutes per side, flipping once, until a deep golden crust forms and internal temperature reaches 160°F (71°C). If patties brown too quickly, reduce heat to medium. Transfer patties to a paper towel-lined plate to rest 2 minutes before serving.
