This beer shows bittersweet flavors of coffee and dark chocolate, with a very complex malt character enhanced by yeast fruitiness.

In a large brew kettle, heat 6 liters of water to approximately 70°C (158°F). Add the pale malt, crystal malt, chocolate malt, and roasted barley. Stir well and maintain the temperature for 60 minutes.

Mashing Process

After mashing, sparge the grains with hot water to collect the wort. Aim for about 5 liters of wort.

Sparging

Bring the wort to a boil and add the bittering hops. Boil for 60 minutes, adding aroma hops in the last 15 minutes of the boil.

Boiling

Cool the wort quickly to about 20°C (68°F) using a wort chiller or an ice bath.

Cooling

Transfer the cooled wort to a sanitized fermenter. Pitch the yeast and seal the fermenter with an airlock. Let it ferment for 7-14 days at room temperature.

Fermentation

After primary fermentation is complete, add the coarse ground coffee and cocoa powder to the fermenter. Allow to steep for 3-5 days.

Adding Coffee and Cocoa

Bottle the beer with priming sugar if carbonating. Seal and let it condition for 2-3 weeks.

Bottling

Once conditioned, chill the beer and enjoy the complex flavors of coffee and dark chocolate.
