Harvest the Sauvignon Blanc grapes when they reach optimal ripeness. This usually occurs in late March to early April in Marlborough, New Zealand.

Crush the harvested grapes and press them to extract the juice. Ensure that the juice is separated from the skins and seeds.

Fermentation

Age the wine in stainless steel tanks for a few months to allow the flavors to develop, while retaining the fresh and fruity characteristics.

Aging

After aging, add sulfur dioxide for preservation, and then bottle the wine in clean, sterilized bottles.
