Harvest ripe Pinot Noir grapes and crush them gently to release the juice. Place the crushed grapes into a fermentation vessel.

Harvesting and Crushing

Add water and sugar to the crushed grapes. Sprinkle the yeast on top and gently mix. Cover the fermentation vessel and let it sit at room temperature for about 7-14 days, stirring daily.

Fermentation

After fermentation, press the mixture to separate the liquid from the solids. Transfer the liquid to a clean fermentation vessel.

Pressing

If desired, add oak chips to enhance flavor. Seal the vessel and let it age for about 6 months in a cool, dark place.

Aging

Once aging is complete, filter the wine to remove any sediment and transfer it into clean bottles. Seal tightly and label.

Bottling

Chill the wine slightly before serving. This Pinot Noir pairs well with grilled chicken or baked fish.
