This American style IPA (India Pale Ale) is highly hopped with Simcoe, Cascade, and Centennial hops Made with English pale and light caramalts, Hoppyum is an orange color, with a citrusy Simcoe taste and aroma.

Heat 5 gallons of water to 165°F (74°C). Add the crushed English Pale Malt and Caramel Malt to the water and maintain a temperature of 150°F (65°C) for 60 minutes.

Mashing

After mashing, sparge the grains with hot water to collect the wort, totaling about 6.5 gallons.

Sparging

Bring the wort to a boil. Add 1 oz Simcoe hops, 1 oz Cascade hops, and 1 oz Centennial hops at the start of the boil. Boil for 60 minutes.

Boiling

After the boil, cool the wort quickly to about 70°F (21°C) using a wort chiller.

Cooling

Transfer the cooled wort to a sanitized fermenter. Pitch the American Ale Yeast. Ferment at 68°F (20°C) for 1-2 weeks.

Fermentation

After primary fermentation, add 1 oz of Simcoe hops and 1 oz of Cascade hops for dry hopping. Allow to sit for an additional week.

Dry Hopping

Once fermentation is complete, bottle the beer with priming sugar and allow to carbonate for 1-2 weeks.
