Bieler Pere & Fils Sabine Rose is a classic Provence Rose wine with a delicate balance of flavors. Summery flowers, white tea and Provence herbs balance enticing aromatics of peach, white cherry and wild raspberry. This blush wine finds a delicate balance of floral, herbal, wild red fruit and stone fruit flavors and has a creamy, yet lifted palate interwoven with rose petals and wet stones.

Start by washing and destemming the grapes. Crush them gently to release the juice and place them in a fermentation vessel.

Preparation of Ingredients

Mix the crushed grapes with spring water and add the organic sugar, acid blend, and pectic enzyme. Stir well to dissolve the sugar.

Creating the Must

Add the yeast and Campden tablet to the must. Cover the fermentation vessel with a cloth and allow it to ferment for 7-14 days, stirring daily.

Fermentation

After fermentation is complete, press the mixture to separate the juice from the solids. Transfer the juice to a clean fermentation vessel for secondary fermentation.

Pressing and Secondary Fermentation

Allow the wine to age in a cool, dark place for at least 3 months. Taste periodically to check for flavor development.

Aging

Once the wine has aged to your liking, bottle it in clean, sanitized bottles. Seal with corks and store in a cool, dark place.
