Allagash White

OLD FASHIONED

If you've only had one beer from Allagash, chances are it was this one. When it comes to Belgian-style Witbier, it's hard to beat this multi medal winner. Creamy, fruity and spicy, it's a perfectly balanced white ale that leaves you reaching for another.

In a large brew kettle, heat 5 gallons of water to 165°F (74°C). Add the Pilsner malt, wheat malt, and flaked wheat, stirring well. Maintain the temperature at around 152°F (67°C) for 60 minutes.

Mashing

After mashing, sparge the grains with hot water to collect about 6 gallons of wort in the kettle.

Sparging

Bring the wort to a boil and add Hallertau hops. Boil for 60 minutes, adding coriander and orange peel in the last 15 minutes of the boil.

Boiling

After the boil, cool the wort quickly to below 80°F (27°C) using a wort chiller.

Cooling

Transfer the cooled wort to a sanitized fermenter. Pitch the Belgian Witbier yeast and seal with an airlock. Allow fermentation to occur at 68-72°F (20-22°C) for about 1-2 weeks.

Fermentation

Once fermentation is complete, bottle the beer with priming sugar and allow it to carbonate for 1-2 weeks at room temperature.
