Brewing Process
1. Mashing
In a large brew kettle, heat 5 gallons of water to around 160°F (71°C). Add the pale malt, wheat malt, and carafoam malt, stirring well. Maintain the temperature for about 60 minutes.
2. Lautering
After mashing, drain the wort into a fermenter. Rinse the grains with additional hot water to extract as much sugar as possible.
3. Boiling
Bring the wort to a boil and add the hops. Boil for 60 minutes, adding the dried orange peel and coriander seeds in the last 15 minutes.
4. Cooling
After boiling, cool the wort quickly using a wort chiller or an ice bath until it reaches about 70°F (21°C).
5. Fermentation
Transfer the cooled wort to a sanitized fermenter and pitch the yeast. Seal the fermenter and let it ferment at room temperature for 1-2 weeks.
6. Bottling
Once fermentation is complete, dissolve the priming sugar in a small amount of boiling water, cool it, and add it to the beer. Bottle the beer and cap.
7. Carbonation
Let the bottles condition at room temperature for 1-2 weeks to develop carbonation.
