Mix and Rest

In a large bowl combine ground beef, finely grated onion, minced garlic, breadcrumbs, milk, egg, Worcestershire sauce, salt, and black pepper. Gently mix with your hands or a fork until just combined — avoid overworking. Cover and refrigerate for 15 minutes to allow the breadcrumbs to hydrate and flavors to meld.

Shape Patties

Divide the mixture into 4 equal portions (for about 4 smaller steaks) or 2 portions for larger steaks. Shape each portion into an oval patty about 3/4-inch thick, pressing a shallow indentation in the center of each patty to help them cook evenly.

Sear Patties

Heat 2 tablespoons of vegetable oil in a large skillet over medium-high heat until shimmering. Working in batches if needed, add patties without crowding. Cook until a deep brown crust forms, about 3-4 minutes per side. Reduce heat slightly if they brown too quickly. Remove seared patties to a plate and tent with foil to keep warm.

Caramelize Onions

In the same skillet (wipe out excess fat leaving about 1 tablespoon), reduce heat to medium and add 2 tablespoons butter. Add the thinly sliced onion and a pinch of salt. Cook, stirring occasionally, until onions are soft and golden-brown, about 8–12 minutes. Scrape up browned bits from the pan — they add flavor.

Make Roux

Push the onions to the side or make a well in the skillet. Sprinkle 2 tablespoons of flour over the onions and cook, stirring continuously, for 1–2 minutes to remove the raw flour taste and to brown slightly.

Finish Gravy

Slowly whisk in 1 1/2 cups beef broth, scraping the pan to dissolve browned bits. Add 1 teaspoon Worcestershire sauce and 1 teaspoon soy sauce (optional). Bring to a gentle simmer and cook until the gravy thickens to coat the back of a spoon, about 3–5 minutes. Taste and adjust seasoning with 1/2 teaspoon salt and 1/4 teaspoon black pepper as needed.

Combine and Simmer

Return the seared patties to the skillet, nestling them into the gravy. Reduce heat to low, cover loosely, and simmer for 5–7 minutes until the patties are cooked through (internal temperature 160°F / 71°C) and the flavors have melded. Spoon gravy and onions over the patties before serving.

Garnish and Serve

Sprinkle chopped fresh parsley over the steaks and gravy (if using). Serve hot with mashed potatoes, steamed vegetables, or rice to soak up the gravy.
