Method

Steak

    Bring steak to room temperature

    Remove the New York strip from the refrigerator 30–45 minutes before cooking so it comes closer to room temperature. Pat dry thoroughly with paper towels.

    Season

    Season both sides of the steak evenly with 1.5 tsp kosher salt, 1 tsp freshly ground black pepper, and 1/2 tsp garlic powder. Press seasoning into the meat so it adheres.

    Preheat pan

    Heat a heavy skillet (cast-iron preferred) over medium-high heat until very hot, about 3–5 minutes. Add 1 tbsp vegetable oil and swirl to coat; the oil should shimmer and lightly smoke.

    Sear steak

    Place steak into the hot pan and do not move for 3–4 minutes to develop a deep brown crust. Flip and sear the other side 3–4 minutes for medium-rare (internal temp ~130–135°F / 54–57°C). Adjust time for desired doneness.

    Baste and finish

    Reduce heat to medium, add 1 tbsp unsalted butter, the thyme sprigs, and the crushed garlic cloves to the pan. Tilt the pan and use a spoon to baste the steak continuously with the melted butter and aromatics for 1–2 minutes to infuse flavor and finish cooking.

    Rest

    Transfer steak to a cutting board, tent loosely with foil, and rest 7–10 minutes before slicing so juices redistribute.

    Slice and serve

    Slice against the grain and plate with the chosen seafood option and sides. Spoon any pan juices over the steak.

Choice - Basa Fish

    Prepare fish

    Pat the basa fillet dry and season lightly with 1/2 tsp salt and 1/4 tsp black pepper on both sides.

    Dredge

    Mix 1/4 cup all-purpose flour with 1/2 tsp paprika. Lightly dredge the fillet in the seasoned flour, shaking off excess.

    Pan-fry

    Heat 1 tbsp olive oil in a nonstick or skillet over medium heat. When hot, add the fillet and cook 3–4 minutes per side, until the crust is golden and the flesh flakes easily with a fork (internal temp ~145°F / 63°C).

    Finish and serve

    Transfer the fish to a plate and squeeze fresh lemon over it. Serve immediately alongside the sliced steak and sides.

Choice - Garlic Shrimp

    Season shrimp

    Toss the peeled, deveined shrimp (8 large) with 1/2 tsp kosher salt, 1/4 tsp black pepper, and 1/4 tsp smoked paprika (if using).

    Sear garlic

    Heat 1 tbsp olive oil and 2 tbsp unsalted butter in a skillet over medium-high heat until the butter foams. Add 3 tbsp minced garlic and cook 20–30 seconds, stirring constantly, until fragrant but not browned.

    Cook shrimp

    Add the seasoned shrimp in a single layer and cook 1.5–2 minutes per side until they turn pink and opaque and have a slight sear. Avoid overcooking.

    Finish sauce

    Remove pan from heat, stir in 1 tbsp lemon juice and 1 tbsp chopped fresh parsley. Spoon the garlic-butter sauce and shrimp over the steak on the plate or serve alongside.

Sides (optional)

    Prepare starch and vegetables

    If serving rice, cook according to package directions. For mashed potatoes, boil peeled potatoes until tender, mash with butter and a splash of milk, and season to taste. For grilled vegetables, toss assorted vegetables with olive oil, salt and pepper, and grill or roast at 425°F (220°C) until tender and slightly charred, 12–18 minutes.

    Plate

    Arrange sliced steak, the selected seafood (basa or garlic shrimp), and the prepared sides on a plate. Garnish with lemon wedges and extra parsley if desired.
