Prep the chicken
Pat the chicken thighs dry with paper towels. Trim any excess fat or loose skin so they lay flat. This helps the skin crisp and allows even seasoning adhesion.

Season
In a small bowl combine kosher salt, black pepper, smoked paprika, garlic powder, and onion powder. Rub the chicken all over with olive oil, then evenly sprinkle and rub the dry spice mix onto both sides of each thigh, making sure to get under the skin where possible.

Bring to room temperature
Let the seasoned chicken sit at room temperature for 20–30 minutes while you prepare the sauce and preheat the grill or oven. This promotes even cooking.

Preheat and sear (grill method)
Preheat grill to medium-high (about 400°F / 200°C). Oil the grates. Place chicken skin-side down and sear for 4–6 minutes until the skin is browned and releases from the grate. Flip and sear the other side 3–4 minutes. Reduce heat to medium (350°F / 175°C) and move chicken to indirect heat. Cover and cook with lid closed for 15–20 minutes, until internal temperature reaches 155°F (68°C).

Oven method (if not grilling)
Preheat oven to 425°F (220°C). Place chicken skin-side up on a wire rack set over a rimmed baking sheet. Roast 20–25 minutes until skin is golden and internal temperature reaches 155°F (68°C).

Finish cooking with sauce
During the last 5–8 minutes of cooking (grill or oven), brush a generous layer of the prepared BBQ sauce onto the chicken. Return to heat and brush a second thin coat 2–3 minutes before removing. Continue until internal temperature reaches 165°F (74°C) and sauce is tacky and caramelized but not burnt.

Combine the barbecue sauce, brown sugar, apple cider vinegar, Worcestershire sauce, and hot sauce (if using) in a small saucepan over medium-low heat.

Remove from heat and let cool slightly. Reserve about 1/3 cup of sauce for serving and use the rest for brushing during cooking.
