1. Prepare the Passion Fruit
Cut the passion fruits in half and scoop out the pulp into a measuring cup. Make sure to strain out the seeds if desired.
2. Mix Ingredients
In a medium-sized mixing bowl, combine the passion fruit pulp, granulated sugar, and lemon juice. Mix well until the sugar is dissolved.
3. Add Eggs
Add the eggs to the mixture one at a time, whisking thoroughly after each addition until the mixture is smooth.
4. Cook the Mixture
In a saucepan over medium heat, melt the unsalted butter. Once melted, slowly pour in the passion fruit mixture while stirring constantly.
5. Thicken the Butter
Continue to cook the mixture over medium-low heat, stirring constantly until it thickens (about 10-15 minutes). The butter should coat the back of a spoon.
6. Cool and Store
Remove from heat and let it cool. Once cooled, transfer to a jar and refrigerate. It will thicken further as it cools.
