Cook Potatoes

In a pot of boiling salted water, cook the baby potatoes until tender, about 15-20 minutes. Drain and set aside.

Blanch Green Beans

In the same pot, blanch the green beans for about 3-4 minutes until bright green and tender-crisp. Drain and rinse under cold water.

Sear Tuna

Heat a skillet over medium-high heat and add a drizzle of olive oil. Season the tuna steaks with salt and black pepper. Sear for about 1-2 minutes on each side for rare, or longer to your desired doneness. Remove from heat and let rest.

In a bowl, whisk together lemon juice, honey, olive oil, salt, and black pepper until well combined.

Plate the Salad

On a large platter, arrange the mixed greens, cherry tomatoes, kalamata olives, potatoes, and green beans. Slice the seared tuna and place on top of the salad. Drizzle with the lemon honey vinaigrette and garnish with chopped parsley and basil.
