Prepare the Pie Crust

In a large bowl, combine flour and salt. Cut in the butter until the mixture resembles coarse crumbs. Stir in cold water a tablespoon at a time until the mixture forms a ball. Wrap in plastic and refrigerate for 4 hours or overnight.

Roll Out the Crust

On a floured surface, roll out the dough to fit a 9-inch pie plate. Place the crust in the pie plate and trim the excess.

Peach Filling

Prepare the Filling

In a large bowl, combine sliced peaches, sugar, cinnamon, lemon juice, and cornstarch. Gently toss to mix.

Assemble the Pie

Pour the peach filling into the prepared pie crust. Dot with butter.

Bake the Pie

Bake

Preheat the oven to 425°F (220°C). Bake the pie for 15 minutes. Reduce the temperature to 350°F (175°C) and bake for an additional 30-35 minutes or until the peaches are bubbly and the crust is golden.

Let the pie cool before serving.

In a bowl, whisk together heavy cream, whole milk, sugar, vanilla extract, and salt until the sugar is dissolved.

Pour the mixture into an ice cream maker and churn according to the manufacturer's instructions until it reaches a soft serve consistency.
