Prepare lettuce
Wash and dry romaine lettuce thoroughly. Chop or tear into bite-sized pieces (about 6 cups packed). Place in a large salad bowl and chill briefly while you finish other components.
Add tomatoes and croutons
If using, halve cherry tomatoes and add them to the bowl. Add whole wheat or light croutons just before tossing to preserve crunch.
Assemble and serve
Slice the cooked chicken thinly. Add about half the dressing to the lettuce and toss gently to coat. Arrange sliced chicken on top, sprinkle with shaved Parmesan and remaining dressing to taste. Finish with extra black pepper. Serve immediately, passing remaining dressing at the table.
Light Caesar Dressing
In a medium bowl, combine 1 cup plain nonfat Greek yogurt, 3 tablespoons fresh lemon juice, 1 teaspoon Dijon mustard, 1 teaspoon Worcestershire sauce, and 1 teaspoon minced garlic. If you like the classic anchovy flavor, stir in 1 teaspoon anchovy paste (optional).
Whisk in 2 teaspoons extra-virgin olive oil for mouthfeel. Season with 1 teaspoon salt and 1 teaspoon black pepper. If the dressing is too thick, whisk in up to 2 tablespoons water, 1 tablespoon at a time, until it reaches a pourable but creamy consistency.
Taste and adjust acidity or salt: add more lemon juice for brightness, salt for seasoning, or a pinch more anchovy paste for umami. Chill dressing for at least 10 minutes to let flavors meld (can be made up to 2 days ahead, refrigerated).
Chicken Preparation
Trim chicken breasts and pound to even thickness (about 1/2 inch) if needed to ensure even cooking. Brush with 1 teaspoon olive oil and season both sides with 1 teaspoon salt, 1 teaspoon black pepper, and 1 teaspoon dried oregano or Italian seasoning.
Rest the chicken 5 minutes after cooking to retain juices, then slice thinly against the grain and set aside. Keep warm or cool to room temperature before adding to salad (if making ahead, refrigerate and serve chilled).
