Prep eggs and aromatics
Crack the eggs into a medium bowl. Separate 5 egg whites into the bowl and add 3 yolks. Add 1 tablespoon water or low-fat milk if using. Season with 1 teaspoon kosher salt and 1 teaspoon freshly ground black pepper. Whisk vigorously until combined and slightly frothy. Thinly slice 2 stalks of green onion, using both white and green parts.
Heat pan
Place a nonstick or well-seasoned skillet over medium-low heat. Add 1 tablespoon unsalted butter or olive oil and let it melt and coat the pan. The pan should be hot enough that a drop of the egg mixture sizzles gently but not so hot that it browns immediately.
Cook eggs
Add the sliced green onions to the pan and sauté briefly for 20–30 seconds until fragrant and slightly softened. Pour the egg mixture into the pan. Let the eggs sit undisturbed for about 10–15 seconds to start setting at the edges. Using a silicone spatula, gently push the eggs from the edges toward the center in sweeping motions, forming soft curds. Continue cooking over low to medium-low heat, folding occasionally, until eggs are mostly set but still slightly glossy—about 2–3 minutes total. Remove the pan from the heat a few seconds before fully cooked; residual heat will finish them. Taste and adjust seasoning with additional black pepper or a pinch of salt if needed.
Toast
While the eggs cook, toast 2 slices of whole-grain or sourdough bread to your preferred level in a toaster or under a broiler. Immediately after toasting, lightly brush each slice with 1 teaspoon olive oil or spread butter. If using, sprinkle 1/4 teaspoon coarse salt over the warm toast for added flavor.
Slice the toast if desired and arrange on a plate alongside the scrambled eggs.
