Prepare bread
Lay two slices of protein bread flat on a clean work surface. If the slices have thick crusts, gently trim the crusts to make wrapping easier (optional).
Spread peanut butter
Evenly spread 1 tablespoon of sugar-free peanut butter onto the interior surface of each bread slice, leaving a 1/2-inch border around the edges to prevent overflow when wrapping.
Add jam
Spoon 1 tablespoon of sugar-free strawberry or blueberry jam onto one slice (on top of the peanut butter) and spread to an even layer, keeping the edge clear.
Filling
Prepare banana
Peel the banana and, if needed to fit, slice it lengthwise into halves or quarters. Sprinkle the banana lightly with 1 teaspoon ground cinnamon and 1/4 teaspoon vanilla extract (optional) and toss gently to coat.
Assemble filling
Place the prepared banana pieces on top of the jam-coated slice so they form a log along the center. If using a whole banana without slicing, place it centered along the length of the bread.
Wrap and toast

Fold the edges of the jam/peanut butter slice up and over the banana, then bring the second slice (also peanut-buttered) on top and press gently to seal. If the bread is stiff, dampen the edges lightly with a few drops of water to help seal, or use toothpicks to hold the seam.
Optional toast
Heat a nonstick skillet over medium-low heat and add cooking spray or 1 teaspoon butter. Place the wrapped banana seam-side down in the skillet and toast 2–3 minutes per side, pressing gently with a spatula, until the bread is golden and slightly crisp and the interior is warmed. If you prefer no toasting, skip this step.

Remove toothpicks if used. Transfer the wrap to a cutting board and slice in half or into 3 pieces. Sprinkle optional chopped peanuts or seeds over the top and dust lightly with sugar-free powdered sweetener if desired.
Serve immediately while warm, or wrap in parchment/foil for an on-the-go breakfast. Refrigerate leftovers in an airtight container up to 24 hours (best eaten fresh).
