Prepare the Onions
Peel the onions and slice them into 1/4 inch thick rings. Separate the rings and set aside.
Make the Batter
In a large bowl, whisk together the flour, cornstarch, baking powder, salt, and black pepper. Gradually add in the beer (or sparkling water) and mix until smooth.
Heat the Oil
In a deep frying pan or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).
Coat the Onion Rings
Dip each onion ring into the batter, ensuring it's fully coated. Allow excess batter to drip off.
Fry the Onion Rings
Carefully place a few battered onion rings into the hot oil. Fry for about 2-3 minutes or until golden brown. Remove them with a slotted spoon and place on paper towels to drain.
Serve
Serve hot with smoked aioli on the side for dipping.
