Liberty potatoes (potatoes with peppers & onions)

Prep potatoes

Wash and peel (optional) the potatoes. Cut into 1/2-inch dice so they cook evenly. Rinse briefly and pat dry.

Heat a large skillet over medium-high heat. Add 2 tbs vegetable oil. When hot, add the diced potatoes in an even layer. Cook, stirring every 3–4 minutes, until edges brown and potatoes are tender, about 10–12 minutes.

Add the sliced onion and bell pepper to the pan with the potatoes. Sprinkle smoked paprika, garlic powder, 1 tsp salt, and 1/2 tsp black pepper. Continue to cook 5–7 minutes more, stirring occasionally, until peppers and onions are softened and lightly caramelized. Adjust seasoning; keep warm off heat.

Prepare protein

If using shredded chicken or birria, reheat gently in a small saucepan with a splash (1–2 tbs) of the green chile sauce or reserved cooking liquid until warm. If using chicken chorizo, cook in a skillet over medium heat until no longer pink, breaking into small pieces, about 6–8 minutes. Keep warm.

Scramble eggs

In a bowl, whisk 6 eggs with 1 tbs milk, 1 tsp salt, and 1/2 tsp black pepper until combined. Heat a nonstick skillet over medium-low and add a small knob of butter or 1 tbs oil. Pour eggs into skillet and cook gently, stirring frequently, until just set but still moist, about 3–4 minutes. Remove from heat.

Combine: In the pan with the warm potatoes (or a separate mixing bowl), add the cooked protein and scrambled eggs. Fold in 1 cup shredded cheese so it melts slightly and binds the filling. Taste and adjust salt/pepper.

Assembly & sauces

Warm tortillas: Heat a dry skillet or griddle over medium. Warm each flour tortilla 20–30 seconds per side until pliable. Optionally brush lightly with butter or oil for extra flavor.

Assemble burrito: Lay a warm tortilla on a work surface. Spoon approximately 1 cup of the filling (potato, eggs, protein, cheese) down the center, leaving 1.5 inches clear at both ends. Spoon 2–3 tbs green chile sauce over the filling (use more if you prefer very saucy). Add 1 tsp spicy pequin sauce or to taste for heat. Sprinkle with a pinch of cotija and 1 tsp chopped cilantro.

Fold burrito: Fold the short ends in, then roll tightly from one long side to the other, enclosing the filling. Repeat for remaining tortillas.

Smothering (optional & recommended): Place assembled burritos seam-side down in a shallow baking dish. Pour remaining green chile sauce over the top of burritos to fully or partially cover (about 1/2–3/4 cup per 2 burritos). Sprinkle remaining shredded cheese over sauce. Broil 2–3 minutes or bake at 375°F (190°C) for 8–10 minutes until sauce bubbles and cheese melts.

Finish and serve: Remove from oven and let rest 1–2 minutes. Sprinkle crumbled cotija and remaining cilantro. Serve with lime wedges and extra pequin sauce on the side. Optionally griddle finished burrito seam-side down 1–2 minutes per side for crisp exterior before smothering.
