Method
Build the Salt River Display
Prepare the base
Choose a large shallow tub or serving tray that will act as the 'river' bed. Line it with a thin plastic liner if desired for easy cleanup.
Pour 1.5 cups of coarse sea salt into the tray and spread it in a shallow, winding line to mimic a river channel. Use hands or the back of a spoon to sculpt small banks and curves.
If using smoked sea salt, sprinkle it sparingly along one edge of the river for contrast and aroma (about 1/2 cup total).
Place the large ice block (optional) at one end of the river to create a melting 'glacier' effect. Surround the ice block with additional cubed ice so the river looks filled and chilled.
Set Up Spirits & Mixers
Pour the club soda, tonic water, and ginger beer into easy-access containers or bottles and place them near the spirits.
Fill small bowls with the kosher salt for rimming, jalapeño slices, cucumber slices, lime/lemon wheels, orange twists, and mint sprigs. Arrange bowls along the river for guests to grab garnishes.

Classic Margarita (single serving)
Rim a glass with lime and dip into kosher salt. In a shaker filled with ice, combine 2 oz (60 ml) blanco tequila, 1 oz (30 ml) fresh lime juice, 3/4 oz (22.5 ml) agave syrup or simple syrup. Shake vigorously 10–15 seconds, strain into the prepared glass over fresh ice, garnish with a lime wheel. Provide smoked sea salt as an optional finish.
Mezcal Paloma (single serving)
In a highball glass filled with ice, combine 1.5 oz (45 ml) reposado mezcal, 2 oz (60 ml) fresh grapefruit or fresh-squeezed orange juice, 1/2 oz (15 ml) lime juice, and 1/2 oz (15 ml) simple syrup. Top with ginger beer or club soda to taste (~3–4 oz / 90–120 ml). Stir gently and garnish with an orange twist and a lime wheel.
Whiskey Highball (single serving)
Fill a highball glass with ice. Add 1.5–2 oz (45–60 ml) blended whiskey and top with club soda (4–6 oz / 120–180 ml). Stir lightly and garnish with a lemon wheel.
Classic Daiquiri (single serving)
In a shaker with ice combine 2 oz (60 ml) white rum, 1 oz (30 ml) fresh lime juice, 3/4 oz (22.5 ml) simple syrup. Shake until chilled and strain into a chilled coupe or over fresh ice. Garnish with a lime wheel.
Service & Maintenance
Keep a small scoop or tongs available for guests to retrieve ice and garnishes hygienically.
Periodically drain melted water away from the salt bed so the salt pattern stays intact and the river appearance is maintained. Replace cubed ice as needed to keep the display cold.
Encourage guests to rim glasses with kosher or smoked sea salt and to use the garnishes provided. Replenish small bowls throughout service.
When service ends, discard used ice and liner, and wipe down the tray. Store unopened bottles back in cool storage.
