Prepare
Preheat the oven to 375°F (190°C). Line a large baking sheet with parchment paper or a silicone baking mat. Make sure the surface is completely flat so the crisps spread evenly.
Combine the grated Parmesan, freshly ground black pepper, and smoked paprika (if using) in a small bowl. Mix briefly so the seasoning is evenly distributed.
Using a tablespoon or small ice-cream scoop, place 8 evenly spaced mounds of the cheese mixture onto the prepared baking sheet. Space them at least 2 inches apart because they will spread. Flatten each mound slightly with the back of the spoon into a 2.5–3 inch (6–7.5 cm) circle.
Bake one sheet at a time in the preheated oven for 6–9 minutes, or until the edges are golden brown and the centers are bubbling. Keep a close eye — they can go from golden to burnt quickly.
Remove the baking sheet from the oven. Let the crisps sit on the sheet for about 1 minute to set, then transfer each crisp to a wire rack using a spatula. If you want curved chips, lift them gently and drape over the handle of a wooden spoon while still warm. Allow to cool completely — they will crisp up further as they cool.
Honey Drizzle & Finish
Warm the honey slightly to make it more fluid: place the measured honey in a small heatproof bowl and microwave in 10–12 second increments until just runny (about 15–25 seconds total), or warm in a small saucepan over low heat for 30–60 seconds. Do not boil.
Arrange the cooled Parmesan crisps on a serving plate. Lightly zest half a lemon over the crisps if using lemon zest for brightness.
Drizzle about 1/2 to 1 tablespoon of the warm honey over each crisp (adjust to taste). If serving as an appetizer for sharing, drizzle honey over a few and leave some plain so guests can choose.
Sprinkle the fresh thyme leaves or microgreens on top and finish with a light pinch of flaky sea salt to taste. Serve immediately so the contrast between salty, savory crisp and sweet honey is at its best.
Leftover crisps can be stored in an airtight container at room temperature for up to 2 days; do not store with honey already applied or they will soften.
