Place the Mercat Brut NV in an ice bucket filled with equal parts ice and chilled water for 20–30 minutes until it reaches 6–8°C (43–46°F). If refrigerating, chill upright for at least 3 hours prior to service.

Chill the bottle

Once chilled, remove the foil and loosen the wire cage while keeping your thumb over the cork. Hold the bottle at a 45° angle away from people and gently twist the bottle (not the cork) while steadying the cork with your hand until the cork eases out with a quiet sigh. Wipe the bottle lip with a clean napkin.

Open the bottle

Pour slowly into gently tilted flutes (or white wine glasses) to preserve bubbles. Fill each glass about two-thirds full (approximately 120–150 ml per flute), leaving room to appreciate the aromas of pear and green apple.

Prepare fruit: using a sharp knife or mandoline, cut very thin slices of pear and green apple. Remove any seeds or core. Pat slices lightly with paper towel to remove excess moisture so they don’t water down the wine.

Garnish glasses: rest one thin pear slice and one green apple slice on the rim of each flute, or float a single slice gently on the surface. Add a small mint sprig alongside the rim or laid atop the slice for a subtle herbal note that complements the fruit.

Serve immediately after pouring while bubbles are lively. Keep the remaining bottle chilled in the ice bucket between pours to maintain temperature and effervescence.

If storing opened bottle briefly, reseal with a sparkling wine stopper and return to ice bucket; consume within 1–2 days for best bubble retention and flavor (pear and green apple notes will fade).
