Prepare artichokes
Drain the canned or jarred artichoke hearts well in a colander. Press gently to remove excess liquid and pat dry with paper towels. If hearts are large, halve or quarter them so pieces are bite-sized.
Make the marinade
In a medium bowl, whisk together the olive oil, white wine vinegar, lemon juice, sliced garlic, dried oregano, dried thyme, red pepper flakes, salt, black pepper, and honey (if using) until combined.
Combine and toss
Add the drained artichoke hearts and chopped parsley to the bowl with the marinade. Toss gently but thoroughly so each piece is coated. Taste and adjust seasoning: add a pinch more salt, a splash more vinegar, or a little more honey to balance acidity if desired.
Rest to marinate
Transfer the artichokes and marinade to an airtight container or jar, pressing the artichokes down so they're submerged in the oil-vinegar mixture. Refrigerate for at least 2 hours and preferably overnight (8–24 hours) to allow flavors to develop. Stir or shake the container once or twice during marinating to redistribute the marinade.
Finishing / Serve
Bring to serving temperature: remove the marinated artichokes from the refrigerator about 20–30 minutes before serving to take the chill off and allow flavors to bloom.
Optional garnish and finish: transfer artichokes to a serving bowl. Drizzle a little of the reserved marinade over the top. Sprinkle optional grated Parmesan or Pecorino, lemon zest, and extra chopped parsley if using. Taste again and adjust: add a pinch of salt, a bit more lemon juice, or a dash of olive oil if needed.
Storage: keep leftover marinated artichokes refrigerated in their marinade up to 5 days. Always ensure artichokes remain covered by oil/vinegar to preserve quality.
