Prepare glass and garnish

Chill the highball glass briefly by filling with ice and water for 30–60 seconds, then discard the water. This keeps the drink colder longer.

Prepare garnishes: cut a thin slice of fresh ginger (about 1/8" thick), a lime wheel or wedge, and pick a fresh mint sprig. Lightly clap the mint between your palms to release aroma and set aside.

Build the cocktail

Add base and modifiers

Fill the chilled highball glass about two-thirds full with fresh large ice cubes (approximately 1 cup). Pour 2 fl oz Seedlip Garden 108 into the glass, then add 1/2 fl oz fresh lime juice. If you prefer a slightly sweeter drink, add 1/4 fl oz simple syrup.

Top with ginger beer

Slowly pour 6 fl oz chilled non-alcoholic ginger beer down the side of the glass so carbonation is preserved and the drink layers slightly.

Gentle stir

Use a bar spoon to gently stir the drink 4–6 rotations to combine ingredients without flattening the ginger beer's carbonation.

Garnish and serve

Float the thin fresh ginger slice on top or slide it along the inside of the glass for aroma. Add the lime wheel or wedge on the rim or inside the glass. Finish by placing the lightly-clapped mint sprig on top; give it one more gentle clap over the drink to release aromatics.

Serve immediately with a straw if desired. Taste and adjust: if too tart, add another 1/4 fl oz simple syrup; if too mild, squeeze additional lime to brighten.
