Freshly squeeze orange and lemon juice. Strain through a fine mesh if you prefer a smoother texture. Keep juices cold in the refrigerator until ready to mix.

Juice and chill

In a mixing glass or cocktail shaker, add the fresh orange juice (2 oz), fresh lemon juice (0.5 oz) and simple syrup (0.25 oz) if using. Add 4 ice cubes and stir briskly for 10–15 seconds to chill and slightly dilute the citrus mixture.

Build the cocktail

Strain the chilled citrus mixture into a chilled wine or champagne glass (a large white wine glass or flute works). Slowly top with 6 oz chilled sparkling wine, pouring gently to preserve effervescence. Do not shake the sparkling wine.

Combine with sparkling wine

Garnish with an orange wheel on the rim or a lemon twist perched on the glass. Serve immediately while bubbly.
