Beat

Crack the 2 large eggs into a bowl. Add 2 tablespoons milk, 1 teaspoon salt, and 1/4 teaspoon black pepper. Whisk until combined and slightly frothy.

Cook

Heat a nonstick skillet over medium-low and add 1 teaspoon unsalted butter. Once melted and foamy, pour in the egg mixture. Let eggs sit undisturbed 10–15 seconds, then gently push the set edges toward the center with a spatula, tilting the pan to let uncooked egg flow underneath. Continue folding every 10–15 seconds until mostly set but still glossy and soft, about 2–3 minutes total. Remove from heat while slightly underdone — they will finish cooking from residual heat — and set aside on a warm plate.

Biscuit or Pancake (choose one)

Quick Biscuit (makes 1 small biscuit)

Preheat oven to 425°F (220°C) or heat a cast-iron skillet. In a small bowl, whisk 1/2 cup flour, 3/4 teaspoon baking powder, 1/2 teaspoon sugar, and 1/8 teaspoon salt. Cut in 1 tablespoon cold cubed butter with a fork until mixture resembles coarse crumbs. Stir in 1/4 cup milk until just combined; do not overmix. Pat dough to about 1-inch thickness and bake on a parchment-lined tray or in skillet for 10–12 minutes until risen and golden. Split and spread 1/2 tablespoon butter before serving.

Quick Pancake (1 medium pancake)

In a bowl, whisk 1/2 cup flour, 3/4 teaspoon baking powder, 1/2 teaspoon sugar, and 1/8 teaspoon salt. In a separate small bowl, beat 1/2 egg with 1/4 cup milk and 1 tablespoon melted butter. Combine wet into dry and stir until just combined (some small lumps ok). Heat a nonstick skillet or griddle over medium and brush with 1 teaspoon oil or butter. Pour batter to form a 4–5 inch pancake. Cook until bubbles form at surface and edges look set, about 1.5–2 minutes; flip and cook 45–60 seconds more. Keep warm. Serve with 1 tablespoon maple syrup if desired.

Meat / Gravy (choose one)

Bacon

For 2 strips of bacon: heat a skillet over medium. Add bacon in a single layer and cook 3–4 minutes per side until crisp to desired doneness. Transfer to a paper towel–lined plate to drain.

For 1 Schreiner's breakfast sausage link: heat skillet over medium and add the link. Cook, turning occasionally, until browned on all sides and cooked through, about 6–8 minutes. Reduce heat if browning too fast to allow center to cook. Rest 1 minute before serving.

Sausage Gravy

For a small serving of sausage gravy: brown 2 ounces (about 1/8 lb) ground sausage in a small skillet over medium heat, breaking into crumbles. When cooked through, sprinkle 1 tablespoon flour over the meat and stir 1 minute to cook the flour. Slowly add 1/2 cup milk while stirring to avoid lumps. Simmer gently until thickened to gravy consistency, about 2–4 minutes. Season with 1/4 teaspoon salt and 1/8 teaspoon black pepper; add 1 teaspoon hot sauce or a pinch of cayenne if desired.

To Finish & Assemble

Choose your bread: split the warm biscuit and spread 1/2 tablespoon butter on the halves, or place the pancake on the plate and top with 1 tablespoon maple syrup if using pancake.

Place the scrambled eggs alongside or on top of the biscuit/pancake. Add your chosen meat: place 2 bacon strips or the cooked Schreiner's sausage link next to the eggs, or spoon sausage gravy over the split biscuit (use reserved biscuit or an extra half if you prefer gravy over both halves).

Serve immediately while hot. This is a demi-portion sized breakfast intended to serve one person.
