Place the bottle in the refrigerator for 30–45 minutes before serving if it has been stored at cellar temperature (around 60–65°F / 15–18°C). Aim for a serving temperature of 60–65°F (15–18°C). If the bottle is too warm, chill in the fridge for 15–30 minutes; if too cold, leave at room temperature for 15–30 minutes.

Chill to ideal serving temperature

Use the corkscrew to remove the foil and extract the cork cleanly. Wipe the bottle lip with a clean cloth or napkin to remove any cork residue or dust.

Open the bottle

Pour the wine slowly into a clean decanter. For younger vintages or a wine described as voluptuous and herbal, decant 45–90 minutes to allow aromas of rich berries, cherries, and herbal notes to open and tannins to soften. If you don't have a decanter, pour directly into glasses and allow to breathe in the glass for 20–30 minutes.

Decant (optional but recommended for a Napa Cabernet)

If using a wine thermometer, verify the wine is between 60–65°F (15–18°C). If warmer, chill briefly; if colder, let stand 10–15 minutes.

Check temperature (optional)

Pour about 4–6 oz (120–180 ml) per glass, filling the glass to its widest part to allow swirling and aroma concentration. For tasting, pour smaller amounts (~2 oz / 60 ml).

Hold the glass by the stem, swirl gently to aerate, and take a moment to inhale. Expect aromas of rich berries and cherries with herbal undertones. Swirling helps release the voluptuous fruit and herbal notes.

Take a moderate sip, let the wine coat your palate, and note structure: fruit (berries, cherries), herbal complexity, body, acidity, and tannins. Allow the wine to sit in glass and revisit over the course of 30–60 minutes to observe changes as it breathes.

Taste and assess

Arrange cheeses and charcuterie on a board. Slice bread or arrange crackers. Offer small bites of dark chocolate for a finishing note. These pairings complement the Cabernet's rich berry and cherry flavors and its herbal, voluptuous character.

Serve immediately after decanting (or once sufficiently breathed) and enjoy. Refill glasses as desired, keeping attention to the serving temperature over the course of the evening.
