If the bottle has been stored at cellar temperature, chill it briefly so the serving temperature reaches about 60–65°F (15–18°C). Place bottle in an ice bucket with a 1:1 ratio of ice and water for 10–15 minutes or move to refrigerator for 30–45 minutes. Avoid serving too cold — chilling too much will mute aroma and soften perceived tannins.

Chill and prepare bottle

If the wine is young (less than 8–10 years) or shows tight tannins, decant for 30–60 minutes to allow aeration and open the aromas of bing cherry, black currant and red licorice. For older wines, decant carefully to separate sediment and pour slowly.

Decant (optional)

Use a large-bowled stemmed red wine glass to concentrate aromatics. Warm the glass slightly in your hands (do not heat) to help release herb and red fruit notes.

Select glassware

Pour 5–6 oz (about 150–180 ml) of wine into the glass, filling to the widest part of the bowl to allow swirling.

If desired, lightly slap the thyme sprig between your palms to release essential oils and rest it in the glass rim or lay it across the top. Drop the halved black cherry into the glass for presentation and a hint of fresh fruit aroma. These are optional — they complement but do not change the wine.

Add garnish

Swirl the wine gently to release aromas of bing cherry, black currant, red licorice and grilled herbs. Inhale, taste, and note the fine-grained tannins and balanced structure. Allow the wine to open in the glass over 10–20 minutes for evolving flavors.
