Prepare Cocktail Base

Make strawberry purée (if needed)

If you don't have ready purée, hull and roughly chop 2–3 fresh strawberries (or use 3–4 frozen). Place in a small blender or mortar and pestle and blitz/muddle until smooth. Strain through a fine sieve for a silkier texture if desired. Use 1 tablespoon for one drink.

Add botanist gin, fresh lemon juice, simple syrup and the strawberry purée into a cocktail shaker. Fill the shaker with ice (about 1 cup).

Secure the shaker lid and shake vigorously for 10–12 seconds until the shaker is very cold and properly diluted.

Assemble & Finish

Double-strain the shaken mixture into a chilled coupe or flute using a Hawthorne strainer and a fine mesh strainer to remove ice shards and strawberry solids.

Top gently with 3 oz chilled sparkling wine. Pour slowly to preserve fizz and create a light pink ‘blush’ color.

Garnish with a sliced or fanned fresh strawberry on the rim and/or a lemon twist expressed over the surface and dropped in.

Serve immediately while sparkling wine is lively.
