Apricot-Glazed Roast Chicken
Preheat and prep
Preheat the oven to 425°F (220°C). Pat the chicken thighs dry with paper towels to ensure crisp skin. Place them skin-side up on a rimmed baking sheet or in a shallow roasting pan lined with foil for easy cleanup.
Make apricot glaze
In a small saucepan or microwave-safe bowl, combine apricot preserves (3 tbsp), Dijon mustard (1 tbsp), apple cider vinegar (1 tsp), and 1 tablespoon water if needed. Warm gently over low heat, stirring until smooth and slightly reduced, about 3–4 minutes. Taste and adjust seasoning — add a pinch of salt or more vinegar if you want more brightness.
Roast and baste
Place the chicken in the preheated oven and roast for 20 minutes. Remove from oven and brush the tops generously with half the apricot glaze. Return to oven and roast for another 10–15 minutes, or until an instant-read thermometer inserted into the thickest part reads 165°F (74°C) and the skin is golden and sticky. In the last 3 minutes, brush with remaining glaze and broil on high for 1–2 minutes if you want more caramelization—watch closely to avoid burning.
Once cooked, transfer chicken to a cutting board and rest 5 minutes. Spoon any pan juices back over the pieces or warm the remaining glaze and serve alongside the chicken.
Yukon Gold Potatoes with Pecorino-Romano
Parboil (optional for faster roast) or roast directly
If you prefer a very tender interior, place potato pieces in a pot of salted water, bring to a boil and simmer 6–8 minutes until just tender but not falling apart. Drain thoroughly and let steam-dry for 1–2 minutes. Alternatively, proceed directly to roasting from raw for a crisper finish.
Toss and roast
Toss the potatoes with 1.5 tbsp olive oil, 1 tsp salt and 1/2 tsp black pepper in a bowl. Spread them in a single layer on a separate rimmed baking sheet. Roast in the same 425°F (220°C) oven (can be roasted alongside the chicken if space allows) for 25–30 minutes, turning once halfway through, until golden and crispy on edges and tender inside.
Finish with cheese and herbs
Remove potatoes from oven and while still hot, sprinkle 1/2 cup grated Pecorino-Romano and 2 tbsp chopped fresh parsley. Toss gently so the cheese melts slightly into the potatoes. Adjust seasoning to taste with additional salt or pepper if needed.
Seasonal Vegetable
Roast or blanch
For quick roast: add vegetables to a rimmed sheet and roast at 425°F (220°C) for 10–14 minutes until tender-crisp and lightly browned. For a brighter, tender-crisp result: blanch vegetables in boiling salted water 2–3 minutes, then shock in ice water; finish by tossing in a hot skillet with the olive oil for 1–2 minutes to reheat and develop slight color.
Finish
Just before serving, squeeze the lemon wedge over the vegetables to brighten flavors. Adjust salt and pepper to taste.
Plating & Garnish
Garnish each plate with a fresh thyme sprig and a small handful (about 1 tbsp) of microgreens or chopped parsley. Serve immediately.
