Cocktail

Build the drink

Fill a rocks glass (or old-fashioned glass) with large ice cubes. Pour 1 oz Campari over the ice, then add 1 oz sweet vermouth.

Top with soda

Gently pour approximately 2 oz cold club soda down the side of the glass to maintain some effervescence and a light layer on top. Stir once gently with a bar spoon (about 4–6 slow turns) to marry the ingredients without flattening the soda.

Garnish

Express the oils of an orange peel over the surface by holding the peel about 3–4 inches above the drink, skin side down, and giving it a sharp twist so oils spray onto the cocktail. Rub the peel around the rim if desired, then drop it into the glass as garnish.

Serve immediately with a short straw or without. Provide an optional additional splash of club soda at the table if the guest prefers a lighter drink.
