    Wash and core apples

    Wash the apples thoroughly. Using an apple corer or a small paring knife, core each apple and cut into 8 wedges (like thick slices). Keep the skin on for texture. Pat the wedges dry with a paper towel to remove excess moisture.

    Make cheese spread

    In a small bowl combine the softened goat cheese (or ricotta), 2 tablespoons of the honey, the lemon juice, and 1/2 teaspoon of the black pepper. Stir until smooth and spreadable. Taste and adjust sweetness or pepper as desired.

Assemble

    Portion cheese onto apples

    Using a small spoon or a butter knife, place about 1 teaspoon of the cheese mixture on the wide side of each apple wedge (enough to cover but not overwhelm).

    Wrap with prosciutto

    Cut each prosciutto slice in half crosswise if slices are large. Wrap one half slice of prosciutto around each cheese-topped apple wedge so the cheese is partially enclosed and the prosciutto overlap seals. Repeat until all wedges are wrapped (you should have about 32 wrapped wedges from 4 apples).

    Arrange and garnish

    Place the wrapped apple wedges on a serving platter, seam-side down. Scatter the toasted chopped walnuts or pecans over the platter if using, and sprinkle the fresh thyme or microgreens.

    Final honey and pepper

    Drizzle the remaining 1 tablespoon of honey evenly over the assembled apples. Finish with the remaining 1/2 teaspoon of black pepper for a subtle contrast.

    Serve

    Serve immediately at room temperature so prosciutto remains slightly tender and apples stay crisp. Leftovers (if any) can be stored loosely covered in the refrigerator for up to 24 hours, but prosciutto may soften and apples may brown.
