    Prepare glass (optional)

    If you prefer a salted rim, pour the coarse salt onto a small plate. Rub the lime wedge around the outer edge of a highball or Collins glass, then dip the rim lightly into the salt so it adheres. Set the glass aside.

    Add ice

    Fill the prepared glass with clear ice cubes or crushed ice to the top. Using clear cubes helps keep the cocktail visually crisp.

    Build cocktail

    Pour 2 oz blanco tequila over the ice, then add 0.75 oz (3/4 oz) freshly squeezed lime juice.

    Top with sparkling water

    Gently pour 4 oz chilled sparkling mineral water into the glass. Pour slowly over the back of a spoon or down the side of the glass if you want to preserve some effervescence and layering.

    Stir and finish

    Give the drink one or two gentle stirs with a bar spoon to integrate tequila, lime, and mineral water without flattening the bubbles. Taste and, if desired, squeeze the reserved lime wedge into the drink for extra brightness.

    Garnish and serve

    Garnish with the lime wheel or wedge on the rim. Serve immediately while sparkling water is effervescent.
