Prepare glass

Select an old fashioned or rocks glass and place one large ice cube (or enough ice to fill the glass) inside to chill while you build the cocktail.

Build

In a mixing glass or small shaker filled with ice, combine 2 oz Woodinville bourbon, 0.5 oz Pedro Ximénez sherry, 0.25 oz banana liqueur, 2 dashes orange bitters, 2 dashes cocoa bitters, and 0.25 oz simple syrup (optional — use if you prefer a slightly sweeter, more rounded drink).

Stir

Stir the mixture briskly with a bar spoon for 20–30 seconds (about 15–20 full rotations) until well chilled and slightly diluted—this integrates the rich sherry and banana notes with the bourbon.

Strain

Discard the water from the chilled glass if necessary, then strain the cocktail over the large ice cube in the old fashioned glass.

Garnish

Express the orange peel over the drink by holding it skin-side down and giving it a sharp twist to release oils. Rub the rim of the glass with the peel and drop it into the drink, or place it on the rim as a twist.

Serve immediately. Suggestion: provide a small stirring straw so the drinker can re-mix as the ice melts to maintain balance.
