Dry shake
In a cocktail shaker, combine Grey Goose vodka, Midori, coconut cream, fresh lemon juice, simple syrup, and egg white (or aquafaba). Seal and dry shake vigorously without ice for 12–15 seconds to build a creamy emulsion.
Wet shake
Add a large handful of ice to the shaker. Shake hard for 10–15 seconds until the shaker is very cold and well aerated.
Discard ice/water from the chilled glass and double-strain the cocktail into the chilled coupe or martini glass using a Hawthorne strainer and a fine mesh strainer to achieve a silky texture.
Fee Foam (Aromatic foam topper)
In a small chilled mixing tin or jar, combine 0.5 oz egg white (or aquafaba), 0.25 oz cold water, and 4 dashes Fee Brothers bitters. Using a handheld milk frother or small whisk, vigorously froth until a stable foam forms (about 30–45 seconds). Alternatively, you can dry shake these ingredients separately for 10 seconds, then spoon the foam on top.
Carefully spoon or pour a thin layer of the aromatic foam over the cocktail surface so it sits on top of the drink.
If desired, grate a little toasted coconut over the foam and finish with a lemon twist expressed over the top and dropped onto the foam.
Serve
Serve immediately. Instruct guests to sip through the foam to get the aromatic bitters, coconut and bright lemon notes with the vodka and Midori base.
