Prep dates and cheese
Using a small paring knife, make a lengthwise slit in each Medjool date and remove the pit. Pat dates dry with a paper towel if slightly sticky. Cut the manchego into 12 pieces (about 1/4 oz / 7–8 g each) — short batons or small wedges that will fit into the date cavity.
Assemble
Place about one small piece of manchego into each pitted date. Top the cheese inside the date with a thin slice of guindilla pepper (you can use more or less to taste). Wrap each stuffed date with 1/2 slice of Iberico pancetta: fold the pancetta slice in half lengthwise if it’s wide, then wrap around the date and tuck the end underneath to secure. Repeat for all 12 dates.
Honey Gastrique & Cooking
Make the honey gastrique
In a small saucepan over medium heat, combine honey, red wine vinegar, and water. Bring to a gentle simmer, stirring so the honey dissolves. Reduce heat to low and simmer until the mixture thickens slightly and coats the back of a spoon — roughly 3–4 minutes. Remove from heat and stir in the butter until melted and smooth. Keep warm.
Pan-sear wrapped dates
Heat a large nonstick or cast-iron skillet over medium heat. Place the pancetta-wrapped dates seam-side down in the dry skillet (no additional oil needed); cook 2–3 minutes until the pancetta begins to brown and crisp. Rotate and continue cooking another 2–3 minutes, turning so all sides get some color and the pancetta is cooked through but not burned. Total searing time about 6–8 minutes. If pancetta fat renders a lot, tilt the pan and spoon a little fat over the dates for even cooking.
Glaze and finish
When dates are nicely browned and cheese is warmed, remove the pan from heat. Using a spoon, drizzle 1–2 teaspoons of the warm honey gastrique over each date (reserve remaining gastrique for serving). Arrange the dates on a serving plate, sprinkle flaky sea salt and freshly ground black pepper over them, and garnish with microgreens or chives if using.
Serve
Serve warm as an appetizer. Provide any remaining honey gastrique in a small dish for guests to add more. These are best consumed within 20 minutes of cooking while the pancetta is crisp and the manchego is warm and slightly melty.
