Pour 2 cups Moscatel Dorado, 1 cup Moscatel, and 1/2 cup Chipiona Chardonnay into a large mixing pitcher. Stir gently to marry the different Moscatel expressions and the brighter chipiona white component.

Combine wines

Taste the blended wine. The Dorado provides rich aromatic sweetness, the Moscatel adds floral lift, and the Chipiona white adds brightness and acidity to balance. Adjustments will be made with honey and lemon.

In a small bowl or jar, whisk 3 tablespoons of light floral honey with 1 tablespoon fresh lemon juice and 1 tablespoon lemon zest until smooth. This helps the honey disperse evenly into the wine.

Make honey emulsion

Add the honey-lemon emulsion to the blended wines and stir for 20–30 seconds. The honey will add rounded sweetness; the lemon juice and zest brighten and keep the finish balanced.

Add two thin strips of orange peel into the pitcher for aromatic oils. Leave the peel submerged while the mixture chills to infuse gently.

Fill the pitcher with 2 cups of ice and stir gently for 1 minute to chill the mixture quickly and allow flavors to marry. Let the pitch rest for 10 minutes in the refrigerator (or at least 5 minutes) so aromatics integrate.

Chill and marry

If you prefer a lighter, slightly effervescent drink, top the chilled mixture with up to 1/2 cup sparkling water when serving. Stir gently once to combine.

Optional lighten

Discard the large ice used for chilling (or strain into serving carafe) and pour the CÉSAR FLORIDO into chilled white wine glasses or small goblets over fresh ice if desired. Garnish each glass with a mint sprig and a single orange peel strip. For special presentation, dust a tiny 1/4 teaspoon of edible gold dust or add a microflower to each glass.

Serve

Taste and adjust: if the blend tastes too sweet, add a splash (1/2 tsp increments) of fresh lemon juice to balance; if too sharp, add a teaspoon more honey diluted in a little warm water and stirred in.
