Bruise sage
Gently clap one sage leaf between your palms once or twice to release its oils. Drop the bruised leaf into the cocktail shaker.
Combine ingredients
Add 2 oz Nolet's Silver Gin, 0.75 oz Acqua di Cedro (or substitute fresh cedar/lemon-citrus juice), 0.5 oz Bitter Rouge Bianco, and 0.25 oz simple syrup (only if Acqua di Cedro is unsweetened) into the shaker with the bruised sage.
Add ice and shake
Fill the shaker with ice (about 3/4 cup inside the shaker). Shake vigorously for 12–15 seconds until the shaker is well chilled and slightly frosty on the outside.
Prepare glass
Strain the cocktail through a fine mesh strainer into a chilled coupe or Nick & Nora glass. If you prefer the drink on the rocks, fill a rocks glass with fresh ice and double-strain the cocktail over the ice.
Garnish & Finish
Express oils from the citrus twist over the surface of the cocktail by holding the twist over the glass and pinching to release the oils, then drop the twist into the drink (optional).
Slap the remaining sage sprig once between your palms to release its aroma and set it as a garnish on the rim or float it gently on top of the cocktail.
Serve immediately. Note aromatic sip: the sage and citrus complement Nolet's delicate floral profile and the Bitter Rouge Bianco adds a rounded, slightly bitter backbone.
