Quick Pickled Cucumbers

    Prepare cucumbers

    Wash the cucumbers thoroughly. Trim the ends and slice into 1/8–1/4-inch rounds (or thin half-moons if cucumbers are large). Place the slices in a medium heatproof bowl or a clean 1-quart jar, layering with the chopped fresh dill and the garlic slices.

    Make pickling brine

    In a small saucepan combine the white vinegar, water, granulated sugar, and kosher salt. Warm over medium heat, stirring until the sugar and salt dissolve and the mixture just comes to a simmer (about 2–3 minutes). Remove from heat.

    Add aromatics

    Stir the black peppercorns and red pepper flakes (if using) into the warm brine. Allow the brine to cool for 2 minutes so it is warm but not scalding; this helps preserve the bright cucumber texture.

    Combine and chill

    Carefully pour the warm brine over the cucumber and dill layers so the cucumber slices are fully submerged. Press down gently with a spoon or a small plate to ensure contact. Let the jar or bowl sit at room temperature until it cools to room temperature (about 30 minutes), then cover and refrigerate.

    Marinate

    Refrigerate for at least 1 hour for mild flavor, preferably 4 hours to develop more dill and garlic aroma. For best flavor, chill 12–24 hours. The cucumbers will keep well in the fridge for up to 10 days; consume within a week for peak texture.

To Serve

    When ready to serve, transfer pickled cucumbers to a serving bowl or serve directly from jar. Garnish with additional fresh dill sprigs and a light sprinkle of cracked black pepper if desired. Serve chilled as a side, on sandwiches, with grilled fish, or as part of a salad spread.
